Non DOP Buffalo mozzarella is available in many formats: julienne, grated, cubes, balls, pearls and logs. It is produced with a microbial rennet making it suitable for vegetarians and this product is available in fresh, bulk frozen or IQF.

ORIGINS AND APPLICATION
Mozzarella di bufala Campana PDO is a fresh cheese with porcelain-white color, it has an extremely thin rind and delicate taste. It is produced in 7 provinces in Central-South Italy: Caserta and Salerno provinces, and part of Benevento, Naples, Frosinone, Latina and Rome. The buffalo mozzarella is a fresh cheese ideal in the preparation of pizza for the delicacy of its taste and is easily combined with many ingredients. The buffalo mozzarella that is used to stuff the pizzas must have an excellent spinning capacity, which must remain abundant and soft; allowing you to get excellent results and high quality pizzas.
