ORIGINS
Taleggio cheese is a soft PDO cheese with an edible rind which grows mould. Taleggio is produced and aged in Lombardy, in Piedmont and Veneto. It is matured for around 35-50 days in natural caves in the middle of Alps. The production process is carefully handled by expert cheese makers who closely follow the traditional methods. The flavour is creamy, aromatic, sometimes with a hint of wine and the cheese has a distinctly pungent aroma.
