AN ANCIENT HISTORY
Pecorino Romano is a PDO hard cheese, cooked, made with fresh whole sheep’s milk, from farms in the regions of Sardinia, Lazio and Tuscany. The cheese is aromatic and tangy. Few cheeses in the world have such ancient origins as Pecorino Romano. For more than 2 thousand years the flocks of sheep that graze freely in the countryside of Lazio and Sardinia have produced the milk from which the cheese is made. Even the ancient Romans appreciated Pecorino Romano cheese, and the Roman legionaries knew this well, they always added an ounce of pure sheep’s cheese to the daily rations to give them strength and energy before going into battle.
